Beefheart?

Hi guys,
I am new to keeping discus. Tomorrow i'm going to buy a beefheart. However, i have no idea how to prepare it. May someone enlighten me on how to prepare Beef heart?

My plan way to remove the fat that is on the heart and mince the meat and freeze small portions.
