Setting a 75 galon tank and I have a aquaclear 500 is this filter is enough to keep the tank water filtrated

Add a sponge filter as well. ATI hydro sponge #4 or #5.
This will really help with the nitrification process.
But to answer your question you will be totally fine with the AC110/500, as long as your media is seasoned enough to handle the bioload you will be ok.
