Most of the aquarium plant books are specifically focused; for example:

Takashi Amano's books are mostly showcasing his tanks (the first volume does include some explanation of the concepts of aquascaping in the Japanese style).

Christel Kasselmann's books concentrate more on the details of the individual species, rather than what's needed for starting / maintaining a planted tank.

A decent book for starters is Tetra Press' "A Fishkeeper's Guide to Aquarium Plants" by Barry James, although it's a bit dated and small, it still has some good beginner info as well as descriptions of about 60 species of plants. I think this book is out of print now though, but you might be able to find it. :(

There's a relatively new book, "Encyclopedia of Aquarium Plants" by Peter Hiscock that is good for beginners:

If you're looking for books, http://www.fetchbook.info/ does a good job of searching the net for good prices.
