Tom - what under the counter filter are you using? I was curious about them, and the ones I found all said they should only be connected to the cold water tap. Do you have a filter on both the hot and cold water?

Got my hardness testing kit. From my tap:
KH is 7
GH is 10
pH is 8.0
Ammonia is 0
Nitrite is 0
Nitrate is 2.5

So I guess the big question on my mind is, do I have to set up a way to age water for 24 hours, or can I add water from my tap, using a dechlorinator in the tank?
I would of course match the temperature before putting water from the tap in the tank.

I'd expect that, in New Mexico, you can go straight from the tap into the tank. You don't have cold winters that would cause problems with gas saturation. You'll need to add a dechloramine as you fill the tanks.

Thanks Willie, that makes my planning a little easier as I was having a hard time fitting in the 75 in my house already, without trying to fit in an aging tank somewhere.

I've tested the tap water for ammonia, nitrites, nitrates and pH. pH out of the tap is 8.0. After aging it for 24 hrs, pH is still 8.0. The pH in my 36 gallon is also 8.0. So it seems like the pH is stable.
My hardness test kit arrives tomorrow, so I'll be able to test KH/GH then.
If your pH is the same with or without aging you do not need to age.
