    Mandi found this on facebook and shared it with me. I of course decided to share it on facebook as well and thought some of the chef's on this site would appreciate it too. I would agree with this 100% though I do get time to sit because I sold my chef soul to a corperate hotel chain. Well here it is. Enjoy!

    I loved being a chef and then I discovered baking. I found my true calling. Wish I had started when I was younger but did not go to culinary school until retiring from the Air Force. Baking bread on a stone hearth was my love!

    Baking is a true art! I had an English Pastry Chef at one of my Clubs, he made one of my wedding cakes, it was so good that the staff of the restaurant we held our party asked if they could have some! Now, how many times do guests actually bring in a good cake? Almost never! Wedding cakes are the biggest scam in our business, they taste like crap and cost thousands!

    I totally agree with this. I see people buying weddign cakes from HyVee ALL the time and they are terrible. Cake is dry as hell and the fondant is about a half inch thick. Screw that noise!

    You should see the cakes from "Carlos Bakery" from the tv show...they look great, but it's not an edible cake, it's an art display, at least it's ok if that's what ou want, better than some crappy cakes that come in dry, and covered in the fondant that you can use to stucko a wall with!

    You would not believe the crap I see come through our hotel. HyVee is the most notorious for dry cakes with half inch layers of fondant and terrible cake decorating skills. It's a shame.
