Discus do not mate for life nor do they care if their partners are changed as long as they're both willing mates. Switching partners is perfectly fine.
Hello All,
I will be setting up a grow-out tank with 2-3 different strains in that single tank (for simpler WCs). Eventually I will separate them into compatible groups and hope for some pairs. My concern though is they might pair up while still in the grow-out tank, resulting in undesirable pairs. If this happens can they be separated and introduced to other potential partners? Or will they shun any fish that's not their original mate?

They are called opportunistic breeders. You can bring mature males and females together and know within a week whether they'll mate. Occasionally, one fish will beat the other one, but only occasionally.
