I never thought to cook with it. . . I just eat it straight out of the jar.
I am trying out a few old fashion recipes that call for Animal based fats. I came across a good website for various Fats to cook with. The company is called Fatworks.com.

They are on Amazon but better prices on their website. They have Pig lards, Beef tallow, Duck fat etc. All natural. Its not cheap but with all the focus on "heart Healthy Vegetable oils" its hard to find good animal based fats aside from the bacon grease and duck and chicken fat I save here and re-use when cooking.
Anyone cook with Real old fashioned animal fats? If so what do use make?

lol.. admit it John . You plan on going out and getting some for that Lard gelato you heard about .
If so might I recommend the duck fat instead for its finer attributes and subtle flavoring.

I cook with the standard bacon fat in the cast iron when cooking eggs, butter when doing French Toast or Pancakes, olive oil when searing a steak.
I have been mixing one pound pork sausage with three pounds ground beef for meatloaf, hamburgers, and casseroles as the pork fat in the sausage helps the beef to stay together. Ground beef used to have some Tallow mixed in to help make it stick together, but this water packed ground beef I find (the cheap stuff at 80% fat free because I can't find lower around here) doesn't stick together very well without something to bind it together.

Dave it makes really great baked goods... piecrusts and bisquits. An italian bread called Ciccioli bread uses lard and fat....its out of this world tasty when warm.
I also use it when I sear the sides of a pot roast before putting in the oven.
Tonight I used mixed fresh veggies in a wok with some duck fat...mmm.mmmm
