    Default Earthy Eggs...Mmmmmmm good

    Hi all,
    I wanted to share a recipe here for my "Earthy Eggs" aka Mushrooms and Eggs. First a bit of history. This recipe is base on one I learned from my former Biology adviser, Doc, while taking a class on mushrooms ( Field Mycology) . That class put a love of edible wild mushrooms into me that never left. We have many good edible mushrooms here in CT that can be found with a little hiking around. Among them is one I truly love. Its called Black Trumpet, Craterellus cornucopioides. Its a "choice edible". Some wild mushrooms are edible, but not really palatable. You can eat them, digest them, and not get sick, but they really aren't very tasty! Not the Black Trumpet! Thats one incredibly tasty mushroom. And its one I have had many times sautéed in butter and scrambled with eggs. Sadly you can not buy it in the stores, its not commercially available fresh. You can buy them on Amazon dried though.. I tried them, they are not as good. You need to go out and find it. Which I have not done in a while.

    I was reminiscing about this delectable dish when I remembered I had some baby Bellas ( baby portobella mushrooms) to use. I decided to substitute them for the trumpets. Trumpets have an amazing aroma to them, Deep and earthy. Portobella mushrooms are similar but not as aromatic. The dish came out excellent and is super easy to make.

    1/2 cup diced portobello mushrooms
    2 eggs
    1 tablespoon avocado oil ( or any oil you use)
    1 sliver of butter

    Salt and Pepper to taste


    Sauté the mushrooms until soft in the oil. , add 2 beaten eggs, scramble and cook. Once cooked, add the butter for flavor, while still in the pan.. I ad a small sprinkle of salt and pepper.

    Thats it. Done deal!
