I would put the buffers to prepare water in the again barrel right after the RO is done filling it .

Yeah, the biggest thing is what you are remineralizing your RO with. Some tap added back? Kent RO Right? Seachem Equilibrium? Pure RO pH will jump all over the place until it has some buffering minerals in it.
