Yeah Liz, boneless, skinless chicken breasts will not likely turn out juicy moist & tender.
Your thought of adding smaller pieces later in the cooking process may work out quite OK. Try it.

I did try it, Chef and it came out juicy moist and tender. It didn't have the flavor of the bone in skin on but it will work in a pinch.

I just made it again, Chef. This time I did have the thighs. My SIL will be visiting from Brazil. She'll arrive tomorrow and I want to give her a special treat. Last time she was here she fell in love with Jambalaya. That will have to be on the list for later in the week. I also thinking about Taiwanese braised pork. She thinks that I'm a good cook when what I really am is a recipe follower. I want to server her stuff I make that I've made and enjoyed in the past.
