    Default egg rolls

    First off I want to say that I enjoy prep. The repetition of chopping and dicing is relaxing for me. But OMG. These egg rolls are wearing me out. I started this morning after WC and I'm just at the point where it's time to roll them and deep fry them. I'm slam warn out from all the standing and walking back and forth to my vegetable garden and compost pile. (my back is falling apart) I just took my afternoon pain meds and once they kick in I'll get to the rolling. All I can say is that after they're done they had better be worth it.

    Good Luck

    IMO there are certain things I make that cannot come close to when I buy or eat in a restaurant.

    I'm getting better at Asian all the time. The egg rolls needed more salt but I followed the instructions exactly this time. Next time I'll no. I did make a killer pork fried rice with some of the leftover Chinese BBQ pork, though.

    Thank you Francis. The Vietnamese one rings my bell. I wish you didn't have to be rich to be able to afford good lump crap meat. My tastes have always been better than my wallet full.

    Don't want to upset anyone here, but I do need to clarify one point. Like chow mein, chop suey, creme cheese fried wontons, etc., egg rolls such as

    do not exist anywhere in China, or in any other part of Asia. What they do serve in China, Taiwan, Singapore, etc. are spring rolls, which look like

    Spring Roll.png.

    Spring rolls have very little, if any, meat, mostly vegetables. So if you are in a Chinese restaurant that has egg rolls on their menu, just know it's not an authentic Chinese restaurant. You're getting Chinese American food. There's nothing wrong with Chinese American food, but it's not Chinese.

    If you go into a sushi restaurant and they offer you seaweed salad, or salad of any kind with uncooked vegetables, just know that it's not Japanese food. And don't get me started on teppanyaki..

    Same here Hong Kong we call it spring roll too, Willie’s photo is the authentic spring roll.

    I know, Willie. The site I get my "Chinese" recipe are from a Cantonese family who had a successful Chinese restaurant here in the States. It's comfort food for me, just like the Chinese restaurants I grew up with in NY and northern New Jersey.

    When I was younger I gave some medical device talks in China and I was wined and dined. Circular lazy Susan with everyone eating directly from bowl and passing. Then praising all attendees with a very potent drink till all were very, very drunk.

    I'll take the neighborhood takeout any day of the week
