If you like asian, and particularly curry, you'll want to try this simple/easy, and very tasty, thai chicken curry.
Got this recipe while living in Singapore and travelling to Thailand several times - I love it - and think it's so much better tasting than indian curries.
AUTHENTIC THAI CHICKEN CURRY
This recipe should do nicely for 2 persons; or a very ample meal for one,( or a lesser quantity dish for one with leftovers).
INGREDIENTS:
- 1 Large, or 2 small, chicken breasts, cubed into smallish bite-sized pieces, which will produce up to 20 or so chicken pieces.
- 1 small can of any brand name coconut milk - 400 mil. (13 oz.)
- 1 small jar of thai red curry paste - any brand name - usually readily available at your supermarket ( 240 mil.)
- 1 - 1.5 cups of chicken broth
-Approx. 1/2 cup of med.-sized chopped onion slices
- Approx. 1/2 cup of diced bite-sizes red or orange bell pepper (optional)
- 2 tbspns. fish sauce (any brand, if available)
- 2-4 minced garlic cloves
-Approx. 1 tspn. of finely grated fresh ginger
- Approx. 1/2 tspn. each of granular; paprika, turmeric, coriander, cumin, and brown sugar
- Grated zest of 1/2 lime, and juice of 1 lime
- 1 tspn. of tomato paste
- Optional - if you can get them: 1/2 tspn. of tubed cilantro paste, and lemongrass paste
-2-3 tspns. of cornstarch stirred into a small bowl of cold water to appropriately thicken the curry sauce as the finishing touch.
PREPARATION:
- Fry the chicken pieces (seasoned with salt & pepper) in a bit of oil on med. heat or so, until lightly browned and cooked through - set aside.
In a medium sized pot, lightly saute on med. heat in a bit of oil, the onion slices, (and the bell pepper pieces if using), until soft/translucent.
Add 3 heaping tbspns. of the thai red curry paste - lightly stirred in to saute, followed by the minced garlic cloves, the grated fresh ginger, the tomato paste and all of the dry powdered spices, the sugar, lime zest and juice.
Stir in the chicken broth, the fish sauce, and the coconut milk to simmering stage
Also add the cilantro paste and lemongrass if using.
Mix all well while simmering, and finally add in all the cooked chicken pieces.
When all is well mixed and simmering, add enough cornstarch stirred into cold water to thicken the sauce sufficiently to produce a fairly thick stew type sauce for spooning over cooked basmati rice you'll want to serve with the finished curry.

Anybody try this curry yet ? If not, I urge you to try it - so easy to make, and quickly too - no fuss, you can just slap it together in no time at all.
Those of you who like Thai food, and for anyone who hasn't tried it, this very popular Thai dish is a 'must have' ! It's so flavorfully addictive, with just the right amount of 'kick' from the thai red curry paste, that I could literally drink the sauce - no kidding !

You will not forgive me. I thought about the smoked salmon I bought that I was planning to use on Trickett's and cream cheese while I was eating my wonderful egg rolls. I thought about egg rolls make with smoked salmon and cream cheese. I found a couple of recipes on line that didn't appeal to me. One guy fried his spring rolls which I didn't know you could do. I'll remember that. Another used egg roll rappers but filled them with smoked salmon and goat cheese. That did not appeal to me at all.
I know that i may be committing a culinary sin but I'm going to try this my way. My best lessons have been learned from things I've failed at. I'm going to use the smoked salmon, cream cheese and shredded cabbage in a Spring roll wrapper. Tell me what you think. I don't care if you crucify me.

Lox on a bagel rocks if you start out with a decent bagel. Remember...I live in MS. I love good sushi. I'm just not smart enough to be able to make it myself.
