20 is a good number, but not all cory cats can stand the temps Discus like.
Sterbai are a good choice
How many maximum numbers of sterbai, albino, and other corydoras would look nice shoaling in a 5x2x2 feet tank with about 6 discus. Is la plata sand better than washed river sand. How many severum are a good number to keep with discus.

Only 20 I thought much more. Anyway will take your word
you can do more. but be sure the Cory cats can take the temps that discus like.
I would do cory cats, rummy nose and cardinal tetras and hatchetfish (also a tetra). I would also include Otinculus (spelling) for a cleanup crew.
What kind of wood will you use in the tank for aquascaping as the discus like to have places to "hide" even though we can see them? I have a big manzanita stump and some spider wood.

Like above mentioned, hatchet fish, rummy nose and tetras go nice with discus. I myself wouldn't put severums in with discus. Keep it simple and only have one center piece fish, which are your discus. I had both but in separate tanks. The sterbai corys will do well in discus temps.
That is a nice size tank. Some dwarf SA cichlids would do well with discus. Lots of types of Apistogramma. Rams come mind too.
Yes dwarf ramrazi I did not think of them they are wonderful
