The only really good way is to watch them spawn. While you can make some educated guess there is no other sure fired method known to mankind.

Using the sexing method explained in the link, can I assume from the below photos, the Pigeon Blood is Male and the Snow White is Female? They are a confirmed pair.

What about judging by the two 'feelers' near the anal of the discus? How do I see?
Yes, starting from their 3rd spawn, eggs were hatched:
Now they are at their 4th spawn with more wigglers this time; hopefully the fry will not get eaten up when they are free swimming (which happened for the 3rd spawn).
There are 20 different things that you could look at that might give you a clue on any certain fish but only 1/2 of them might apply to the next one. The best advice I can give you is to see lots of proven pairs. The more fish you see the better you get at it but there are no hard and fast rules.

I have a few pair to tell between male and femal is the fin nears the tail close to the bottom fin not pointy fin is female and far from tail and pointy bottom fin is a male.
Below are the female and male. You can tell the diff from bottom fin.bottom fish is female.
