I'd bet you accidently double dosed the #1 reagent and never added #2.....
just tested my 75 gallon and 0 nitrates???? hmmm it's decently heavily planted and it's been cycled.... i wonder if the Eheim Efisubstrat Pro has something with it.... does this stuff denitryfy????? how much.... i pretty much have a 2028 full of the stuff
if it stays at 0 for a while longer time for more discus....
(there's 6 4-5 inchers in there now)

There is your answer, the plants will be using the nitrates faster than they are produced.

Comfortably numb.
As long as you have a decent flow of water through the filter there'll be no de-nitrification.
Between the plants using the NH4 before the bacteria get it and then using the NO3 in the end it's not overly surprising that there wouldn't be a readable NO3 level

I'm sure you guys are better versed in this but its hard for me to imagine that there are enough plants in a 75 to zero the bio-load of 6 discus that size....
