No - they won't starve to death in this amount of time. Fish can go weeks without food. It would be helpful to post some pictures and details about your tank so that people can give you some ideas.
I have 4 discus and 4 peppored cories in a 125g tank.
1 red dragon, 1 snowfire red, and 2 mosaic leopards.
The breeder that I bought them from fed them beefheart only, so I bought a pound of beef heart from them (all the fat cut out) and NLS pellets. They ate the beefheart for two days and when I introduced the pellets, they wouldn't eat them. When I tried feeding them beef again, they wouldn't eat that anymore! I also tried frozen bloodworms, Omega mini pellets, flakes, crisps, granules, and peeled peas.
They are now on day 5 of no eating!!!!!
The water parameters are excellent and I've also tried adjusting the temperature to see if that's the problem, but they just won't eat!
Can they starve to death since it's been 5 days? What should I do?

Is your tank going thru a mini-cycle? Test your ammonia/nitrites please. Also are you doing water changes? If so how often and how much?

Your discus are talking to you....are you listening
In addition to the above advice and questions which you should answer for help.
It also sounds to me like you are panicking and throwing too much food at them at once. Are you cleaning the uneaten food? That too as pat said can throw your water off...
Healthy fish will eat... remember that. Do one food at a time, small amounts. Pick one and stick with it for a week or so. Only that food. If they don't eat then something else is def off.
Water test is #1 step
