I Was Able To Sell My Arowana So I’m Now Preparing My Tank For Discus
Today I Remove All The Gravel And Checked My Water Parameters
Ph-6
Ammonia- 0.00 Ppm

How Often Should I Do A Water Change To Maintain This?
Any Advice?

Having a ph of 6 and having zero ammonia isn't necessarily maintaining good water parameters.

Will you be using RO or tap water? Is your tap water 6 ph?

Ammonia at 0 just means your bio-filter is working.

What size is your tank and how long has it been set up - is it cycled?
How many discus, and of what size, are you planning to get ?
Last but not least, have you done your homework ahead of time, i.e. read all the stickies in the Discus Basics for Beginners section ?
Please answer these questions and then we'll be able to help you properly.

Well, it's not strictly a question of how frequent and how large of water changes you do to maintain good water quality, parameters and conditions, but that's a large part of it - the more frequent and larger quantity, the better.

But even more importantly for you, if you're getting young 2" discus, you should do large daily wcs, at least until they reach about 3.5" approx., so as not to run the risk of lesser-developed, or even stunted fish ..... or better yet, to grow them out to optimum potential.
Anything less, there could very likely be some disappointment in the offing for you as and when they grow out.

If you want to lessen the necessity for daily wcs, get at least 3" fish, or larger.
