What Should be the maximum number of discus should you keep in a 75gal tank

That mostly depends on the size of the fish and size and frequency of water changes.

Unless it is a grow out tank, the general rule of thumb is 10 gallons of water per discus.

Depending on the size of your discus, decorations, substrate, you should be good with 7 adults.

If you're getting little ones to grow out, you can do more until they get larger, then select the best to keep & sell off the rest.

Adults - 7 maybe 8 (depends on water changes, filtration and size of adults)
Juvies - Depends on size (2" to 4" maybe a dozen until they grow out)

Will there be other fish in this tank besides discus? Need to factor that in too.

I have 10 in mine (7 adults, 3 sub adults) not to mention the huge BGK and the 6 starlight plecos, way over stocked. I have to do daily water changes but all the fish grown out in the tank turned out nice and everyone gets along fine. I'm going to sell or give away the 2 stendker alenquers so I'm left with 8 adults. When we buy a house next year I'm going to build a rack so I can expand a bit and buy a 120g display tank.

lipadj, are you overstocked or do your plecos make too much waste? I have read that they do but I do not keep them.

I'm very heavily stocked but its easy to keep the water pristine with daily 95% water changes. Plecos are messy but I don't let it build up.
