Pigeon blood

As I have been looking through different discus I see pigeon blood and regular that look very much the same. What makes the pigeon blood well a pigeon blood. I have noticed they have red eyes and orange red pattern.

So if they are named for the red eyes is it possible to get fish with the same coloring with out the red eyes?
