Hi,
Is it normal behaviour for a female to lay eggs by herself without pairing up with a male. She ate them pretty much straight after.

yep, if there r males present they may start participating in future spawning. sometimes it takes them a while to figure things out

I've seen this a few times at discus shows. The discus are tanked side by side and they can see each other, all these perfectly conditioned adults meeting each other thru the glass.....

I have had many female cichlids do that with no male anywhere in site. Sounds to me like you are providing quality food and tank care for that to happen. No worries it happens all the time.

Females in general go through a cycle;no need for a male.

Your answer is yes, just assume she is healthy and practising.
