View Full Version : Meatloaf ----- Taco without the shell

three pounds ground beef
one pound sausage
two packets taco seasoning
three cans diced chilies
1/2 pound Monterey Jack Cheese
1/2 pound Cheddar Cheese
1 can refried beans
2 cans sliced olives
2 cans sliced mushrooms
two cups salsa

Mix together (I use a dough hook on a mixer)
Make your loaf
bake at 350 for an hour and 20 minutes.

I take a small crock pot and heat refried beans (normal and cilantro/lime) with 1/2 pound of cheese to serve as a side.

I like a little hot sauce on my meatloaf when served along with some sour cream.

That looks real tasty and easy to make as meatloaf should be!

Thanks Al,
took a pay cut three years ago so that my commute was only 25 miles each way instead of 90 miles each way.

Finally got a new position here that put me back up to where I was in pay. That said I am getting my aquarium spruced up.

What kind of diced chilies do you use, Dave ? Is it like the 'Dos Amigos' mild diced green chilies in a small can ?

The hot sauce is right up my alley too !

mild diced chilies, what ever brand is available at the local store.

I have also made it with the diced chilies and sliced jalapenos.
