This is for Barb. I told her I'd email it to her but my computer forgot her email address. It's very good and easy peasy so I hope everyone reads it.
1 1/2 lbs spicy Cajun sausage sliced 1/2" thick
1 lb kidney beans (Camellia brand are the best IMO)
Kosher salt
1 T. lard (or vegetable oil for those who are afraid of lard)
1/4 c. olive oil
2 Poblano peppers or green peppers seeds and veins removed, chopped
a big onion chopped
3 fat cloves garlic minced
2 stalks celery chopped (I use the leaves as well)
6 c water
2 bay leaves
1/2 t cayenne
1 t thyme
1/4 t
sage
1 t Cajun seasoning
Rinse beans and soak overnight in large pot with 2 T salt
Strain, rinse and add to dutch oven with 6 c water
In a good heavy pan eat lard till shimmering and add sliced sausage. Cook while stirring until brown
Add veggies and cook until veggies are tender and just starting to brown
add spices
stir the veggies and sausage to the Dutch oven
bring to boil, cover and simmer slowly for about an hour or two until beans are totally tender when you taste them.
Serve over rice
I've also have it made with the sliced sausage and clopped onion browned. Then add the water and the soaked beans. Throw in a ton of Cajun seasoning. salt and pepper. Bring to a boil, cover and simmer until done.
That was good, too. This is a recipe has many variations . But I have never had a bad red beans and rice
