I like to eat it right out of the jar. The Asian store has good kimchi that they make themselves. But I was looking around for other ways to use it. I made kimchi fried rice once. I wasn't overwhelmed. Today I ran across this re;acipe and the tastes buds in my mind can't quite taste it. It sounds like it might work since guacamole is so mellow and the kimchi has quite a kick to it. Tomorrow will be my Mexican food day so if nobody has an opinion, I guess I'll make it and decide for myself if I like it. I just hate to make something that I'll have to toss out if I don't. I donno if the dog will like it but Chicken Chicken might,

I made some kimchee not too long ago. I can't say I really care too much for it, but I've never had it before so I don't know if it's the kimchee or how I made it. I followed the directions precisely...

Most Americans don't like it. My Asian chef said that I was the only "white" person who did. I decided to make my regular guacamole because I know it's good. And I'll be having it with that chipotle roast which already has a big kick to it.

I just had some kimchi with Korean short ribs and Udon. That kimchi can be really hot and spicy, a nice salad with honey mustard and bean sprouts is a nice blend. I don't have access to fresh bean sprouts, I need to sprout my own, I found this recipe from one of my favorite Asian cooks. It also sounds good. Thanks very much, Francis. We have an Asian store 20 minutes away but since it has gotten so hard for me to walk, I usually depend on Amazon.
