I wanted to know if it was normal for nitrite peak to last that long.
I started my fishless cycle 5 or 6 weeks ago and I'm in my nitrite peak since almost 3 weeks. Is this normal or it should have begin to go down by now?

The nitrite peak will last something like twice as long as the ammonia peak. The nitrite peak will go down very fast, over the span of maybe 3 days, one day you think maybe it is down a bit, the next day it appears to be down for sure but not much, then wham, it is gone. The entire thing will last something like 38 days.

The things that will mess that up are low temp and pH crash, so check the KH and the pH and be sure that both are in reasonable territory, if not do a partial water change or add baking soda.

Sometimes nitrItes stall if they are too high. I'd do a partial water change.
