switched to a black gravel bottom with a dark blue background. all my discus are darker than with the barebottom but they seem to be swimming around normally, without agitation. could they just be adjusting? should i get brighter lighting?

Dark surroundings will make the discus darker - they trying to 'blend in'. In pigeon blood strains, they'll pepper up.
Keep the background a light blue, use either a bare bottom or a thin layer of sand and the discus will brighten up.

For certain things it is. I use a BB for my new QT tank and a White sand substrate for my show tank.
I don't like show tanks without a substrate.
