Have you ever felt..

a panic attack when u see one of your healthy discus suddenly refuses to eat food, especially when u dump his favorite beefheart/bloodworms etc and suddenly he does not eat or show no interests at all? But then, when u dump other food he usually doesn't go wild, he eats it.

is this normal behavior for discus? This ups and downs sometimes really drive me crazy....

There are definitely ups and downs.... as long as they're eating good, you're good.
