I am wondering, if i can feed them salmon or any other type of fish by itself or mix with beefheart.

I have done both.....strictly a fish diet including salmon and also a beefheart mixture and also a combo of the two.
eddie has a recipe for a seafood mix with not beefheart.. its pretty good

I think the majority of beefheart mixes I have seen include fish and or seafood. I have used salmon but most of the time I use Cod. I also use shrimp in mine.

Freshwater fish may carry disease/bacteria/parasites/etc that could potentially be passed on to the discus. A saltwater fish would not carry the same type of pathogens and the ones it might carry are usually not harmful to freshwater fish.

Salmon should be fine, although they are anadromous which means they can do either fresh or salt water.
I usually stay with things like ocean perch or cod because they're pretty cheap and from the ocean.

Actually, salt water fish can contain pathogens just as readily as freshwater fish. I shudder just thinking about the time I bought some scrod for dinner years ago, only to find tiny worms in it when I opened the package....ugh.
I do use fish in my seafood mix. My discus love it and eat it as readily as they eat beefheart...and my mix is a lot less messy! I use salmon and perch or cod, depending on prices at the fish market that day.

All fish have worms some you just can't see well.

I don't think it's whether they have parasites or not, it's whether said parasites are contagious. The theory behind using ocean/saltwater fish is that the pathogens adapted for them are not adapted to survive in a freshwater ecosystem or freshwater fish.
That's just a mitigation factor, because there are diseases that can go in both environments. They're just fewer.
