How many discus could I keep in a 70G cube 30x30x18.

Cube tanks aren't ideal discus tanks. Although the tank actually holds 70 gal, because of the shape, it doesn't offer bottom space for territory adults seek out. At 1 per 10 gal, theoretically 7 would work.

Personally, I would go with 5.
