I have 2 breeding pairs one pair lays clear eggs, and the other like a orange color. Does anyone know the reason behind this?

I can't tell you the reason, but it is common. Most of my females over the past few years have laid amber coloured eggs, but others like my red cover have laid very reddish coloured ones. Just varies by strain. Hope someone else comes along that can tell you the actual reason why.

Mine seem to change. no clue if its the diet, or "Just the way it is" ;)

Diet/color enhancements do affect the egg color but as Keith pointed out some strains egg color do appear to be naturally different than others.

Good point on the diet Larry. My experiences have been with feeding exactly the same diet to all the parents, so at least in my case it's a completely natural occurence.
