    Pork Tenderloin

    A new one I just made up today. Very good!!!

    I rolled out a pork tenderloin (for lack of a better word) until it was about 1/4" thick, then sprinkled some Cajun spices (Tony's), then smothered it in Queso cheese, Cajun sauteed' mushrooms, smoked sausage chunks and a little crushed pineapple. Rolled it up, wrapped it in bacon, sprinkled more Tony's and smoked at 225 for 4 hours. Tasty!!!

      Looks good Brian -

      I'm just getting into smoking meats on the grill, Brian, and finding it sure adds a lot of good flavor - specially low & slow meat cooking with reverse searing - this after doing a tremendous amount of bbq grilling during all seasons for many years - so - even long time cooks learn something new no matter how long they've been at it, right ?
