    Jerky recipes wanted

    Looking for some good Jerky recipes.. beef or turkey. I've made a few recipes already but thought I'd see if any of you have good ones.

    The price of commercial jerky is just nuts and I really want something all natural.. no nitrites. The problem with all the commercial jerky out there is they say it has no nitrites added and is " all natural" but its not. If you look at the ingredient list they show Celery powder. Celery is a source of nitites so by using celery powder they can say.. all natural, no nitrites added.

    Great marketing ploy really.

    I don't have any recipes, but my sister-in-law's father is a big hunter and makes all sorts of deer jerky with varying recipes. I'll put a feeler out and see if he'll share his recipes.

        I went through a phase of making an air dried "jerky" called Biltong some time ago. I actually just threw away my little cabinet that I made for it because we're moving and it's hard to justify the space. But it's pretty easy to make. Recipe is quite easy, but I'm sure there's some variation. I think I made this recipe once, but I never used any sugar.



        It's pretty easy and doesn't require any heat (unless you need a light bulb). It's a bit different than typical jerky. You can control how much weight you dry off which can leave the meat fairly moist still. I prefer it more dry, personally. But some people make it and it looks more like a steak. I was never quite that comfortable. But I made a bunch, vacuum sealed it, and tossed it in the fridge. Ate it a year later and didn't get sick.

          I've always used a basic soy sauce, worcestershire sauce and brown sugar recipe along with any choice of spices. Marinate for about 10-15 minutes. It's not too creative but it's quick, easy and tasty.

              I have a dehydrator from that guy who used to sell the pocket fisherman, lol... Got it as a birthday gift from my grandmother when I was around 15 years old. If I remember correctly, it's 1 cup of each ingredient, and I forgot I also add about 1/2 of a small bottle of liquid smoke, marinate for about 10 minutes and place the strips on each tray one at a time then sprinkle with spices. Coarse grind black pepper is fine, but I also add light sprinklings of garlic powder, Cajun spices, onion powder, etc.... I rotate the 5 trays about every 6 hours and in about 18 hours I begin pulling pieces off one at a time until they're all dried. Around 24 hours with 1/4" thick meat. I used to use eye of round or rump roast. I've also used it with turkey. Turkey dries very thin and can become pretty brittle but it's still good. The boldness of the sauces tone down quite a bit so you can't marinate too long or it'll overpower the meat.

              You can substitute the brown sugar with honey but I'm not sure of the amount.

              I just found the one I use. There's no fan, it's powered by low heat and convection, which is why you have to rotate the trays. I think the recipe even came with it, lol...

                This is totally unrelated to beef jerky, but if you've got a dehydrator and you like tomatoes. Do yourself a favor and slice some tomatoes relatively thin and dehydrate them until they're "crispy".

                  Yeah, I've logged thousands of hours on that machine. I love it! When I used to go climbing, I would make a trail mix that consisted of dried granny smith apples, strawberries and kiwi. Talk about an energy blast!! Dried kiwi is incredibly awesome!!

                  Every year I make a batch of dried tomatoes...
