What are they supposed to taste like? Because I grew them and thought they were not very good. Almost plastic-y/chemical taste. Hard to describe. Made me wonder what people taste when they talk about how great habanero flavor is...

To me they tasted like red or yellow bell pepper with a fruity taste not present in the red or yellow. Plasticky, I did not get. They do take awhile to ripen completely.

All this talk of peppers, along with the frigid nights we've been having, made me crave some chili. I cooked some up with fresh poblano's, jalapeno's, sweet banana, more jalapeno's, sweet orange bells along with the last of my home grown tomatoes and some ground deer, pork, buffalo, elk and beef. What started off as a small pot ended up being almost 3 gallons, lol... It's quite hot and spicy but with the sweet peppers, the hot doesn't last too long. It hit the spot!!

Brian that sounds great! Where do you get your deer buffalo and elk? Out here I can get buffalo easy.. most meat shops carry it. Elk is impossible ..deer is findable or hunt able. My father-inlaw belonged to a rod and gun club for years and each year they had a huge wild game dinner. Started as them all providing the game but in time it grew so popular they had it catered. I loved those dinners.

What's the big black stuff in the chili, Brian? Looks like olives.

Yes. It's not very traditional, but I like black olives in my chili. I put them in at the very end so they don't cook down. And they don't freeze well so I only put them in for the meal.

I got the elk and buffalo meat at Sprouts this time at a surprisingly decent price. I believe they're farm raised. Walmart here actually sells ground buffalo meat. In the past, a friend has given me some elk and antelope roasts and steaks from his hunts in Montana. Antelope is a bit on the sweet side and is excellent.

I usually like my chili with chunks and shredded roasts but I didn't have them available on short notice. I'm trying to clear out my old fridge so I can get rid of it because it's in the way of my kitchen remodel...

On man Brian, that looks delicious. We are getting ready to make chili here. Perhaps I should like at different meats. I know my son-in-law has deer meat.

Pat, deer meat is very lean. While it's excellent in chili, it's a good idea to add some pork to the dish for the fat content as well as the flavor. You could add some higher content beef but it's not the same and can make the dish taste a little greasy.

I don't think it's legal to sell hunted meat anywhere in the US, but I could be mistaken.

Olives in chili is interesting. I was trying to figure out which of your ingredients they might have been.
How did you find out you liked olives in chili?

I think you're correct on the wild game.

My mother did that when I was a kid. I thought it was good so I just continued. They don't really add a whole lot to the flavor, but they taste good when they fill up with chili juice and you bite them. Like I said, much better fresh from the can than cooked down or after being frozen because they're too soft.

You should hear the comments and see the look on peoples faces when I enter a chili contest... But mine is always the first empty croc pot, lol...

Brian, I have used Dartagnan for various meats..

During the pandemic It was a lifesaver. Not cheap by any means but every now then they run sales... I scored a freezer load of Bison awhile back for less than beef. I like duck so we get it there sometimes.
