10 jumbo eggs
pound mild or sweet Italian sausage
1/4 pound cheese (Monterey Jack, cheddar, or both)
fry sausage
add eggs
add cheese
stir until eggs cooked and cheese melted.
I like to serve these on a flour tortilla, but on mine I throw in some salsa or siracha.
