Any one interested in learning my recipe for this killer slow roasted pork butt let me know and I will fill in the details.

Pork Butt used here was 10 lbs
Preheat Oven to 325F
I start with a pork Butt, trim excess fat lightly. Rub the roast with a generous amount of salt, Coarse Black pepper and granulated garlic powder. You can do this indoors on a stove top but I like to use an outside Burner. In a large heavy frying pan add a small amount of oil. Heat the pan and add the roast, You really want to sear all the sides. I use tongs and literally do that.. sear all sides until just shy of burned. Just before taking it off the pan, pour on the roast about 1/2 cup red wine vinegar.. its going to steam and will kick up all the good stuff that the browning leaves in the pan. I let that go about a minute. Remove from heat and place roast in pan with lid . I use a steel enabled Roaster with Lid. When you put the meat in the roaster, pour the liquid from the frying pan on top and close the lid.
If you want to cook veggies with it use a large enough roaster to fit them, but do not add then yet.
Place Roaster in Oven at 325F. Leave it be at least 4 hours. If adding Veggies, add them after the 4 hours and continue cooking at 325F until they are soft.. usually takes about 90 mins..
Total cook time is about 5 1/2 hrs. for fall off the bone meat.
You can conversely shorten that by cooking at 350-375 and using a meat thermometer but it will not be fall off the bone. I always slow cook these roasts. I like these roasts because they work well with pork Butt, beef pot roasts, and Lamb roasts.) I also like how I just set and forget for 4 hours.
If you want to add those veggies.. before you add them sprinkle with salt, pepper, garlic powder, italian seasoning , and a little olive oil. Toss until coated then add to the roasting pan for the last 90 min.
I use carrots, potatoes, onions cut in quarters, and sometimes sweet potatoes.
This recipe also works well if camping , you use a cast iron Dutch oven and cover with coals... just use smaller pieces of meat.

oh, note on the vinegar, I consider a main step.. It adds a sweetish tang that really compliments the roast but doesn't overwhelm. Never had anyone complain about it but its use is up to you,

Do you mean red wine vinegar?Just before taking it off the pan, pour on the roast about 1/2 cup red white vinegar..
These will be smoked and some are for someone else but I've been given permission to experiment, lol... I still have the rub you sent me so I may do a hybrid of your recipe only cook on the smoker. I usually cook at 225 for 8-10 hours but I may up the temp to around 275 for the butts and see what happens. Even a little burnt pieces on butts is good as long as it's been rubbed and mopped.

Ive never used a smoker but i cant see why the temp and time you use wouldnt work with my recipe.. long slow cooks work great.. ive done temps and times like that with legs of lamb.
Forgot I sent you that rub. That would definitely work on the pork.. I use it on everthing here
